Mini Beef Chimichangas

This is my very favorite recipe- not just because it's delicious, but it brings back warm memories of family gatherings and closeness with my first husband's family! I add extra green chilis and make them smaller so that they are not still cold inside after you freeze them then fry them. This recipe yields, at least, 60 mini chimichangas so I've shared them with people struggling with hunger too!


First freeze separate, then store them in freezer bags.
